PICKLED PINK

What's not to love about these? There is nothing dull about them! They possess a bright, cheery, almost candy-like color. Bite into one and enjoy the healthy snap and crunch followed by a mouth awakening jolt of sweet and sour.

Introducing thick rings of onions into a pungent bath of vinegar, sugar and spices consummates a marriage of passionate flavors. The finished product is so addictive that I've happily munched my way through half of my batch before the sun has set on their second day! The talented Matt introduced the recipe and wrote a far more interesting post than I shall even attempt here. I suggest you take a field trip over to Matt's site and let him share his love of all things brined with you. While you are out, stop and pick up some gorgeous red onions! As long am I'm nudging you there let me urge you to make a double batch. Just trust me on this one!

Ohhh, that's so Levine & Rose! I love the color and I've been in a pickle mood after making some great refrigerator cukes. Farmer's Market is Friday, hope they have red onions.
